The Chubby Hubbies
I first came across a “chubby hubby” last week while looking around the Smells Like Home blog of Tara, she calls it an I heart my Chunky Hubby Cupcake. I was amazed and surprised and couldn’t wait to try the recipe. I am happy to say that by my further surprise today while perusing pinterest, I found Kristyn of Pretty Kitten’s Kitchen’s Chubby Hubby Bars! I am having a serious chocolate, peanut butter, caramel withdrawal!
I was going to wait until I tried the cupcake recipe to post about it, but now that I have found the bar as well, I couldn’t wait to share the chubby deliciousness.
Review to be posted very soon

No Bake Hot Fudge Oreo Cupcake
OK, so I haven’t posted a cupcake in a while and I was so excited when I came accross this No Bake Hot Fudge Oreo Cupcake. It looks simple and delicious and my 15 year old is going to love Jonna (wow, this will even be an added bonus since the name “Jonna” has inside meaning in our family) from Get off Your Butt and Bake for sharing this recipe. My Jenna loves Oreo ice cream and I know she is going to love these as well.
I am also very excited about trying this home made hot fudge sauce. In an attempt to make us all healthier, I am trying to cut out all preservatives and especially MSG from our diet and if I am making it myself, I KNOW what’s in it!

Cupcake of the Month
VANILLA CUPCAKE WITH STRAWBERRY FROSTING
15 years ago today, my beautiful daughter Jenna was born. She was whisked off to intensive care the moment she was born. It was a scary experience and I am forever grateful that she is with us here today.
This cupcake was her special request for her special day.

Ultimate Vanilla Cupcake
My daughter decided that she wanted vanilla cupcakes with strawberry icing to celebrate her birthday, so I perused Pinterest in search of a delicious recipe. I searched for vanilla cupcakes and one of the most seamingly exciting was the “Ultimate” Vanilla Cupcake over at Cupcake Project. They claim to have had over 50 bakers taste this recipe and it is supposed to be the bomb.
On my first attempt, I followed their recipe to the letter (with the exception of omitting vanilla beans because I didn’t have any on hand). I was quite disappointed at how the cupcakes came out. While they were cooking, they looked spectacular. They were plumping up quite nicely. But the longer they cooked, the more they deflated. The final cooking time to get a clean toothpick was 20 minutes. I am still really confused, but here is how they looked once cooled. Completely Flat.
Since I was making these for my daughter’s special day, I decided to attempt the recipe again with a few changes. For the second attempt, I decided to try sifting the flour. I also decided to mix the batter beyond the instructions that just call for mixing until blended. I ran the mixer for over 4 minutes and still couldn’t get the light fluffy consistency I wanted, but I forged ahead anyway as to not waste the ingredients.
Needless to say, the second batch didn’t come out any better than the first. I am still wondering if perhaps I just needed to fill the cups a little more, but I don’t know that I want to waste the ingredients on another try at this recipe.
The flavor of the cupcakes is really good, but they are quite dense from both attempts. I will definitely be in search of another vanilla recipe.

Chocolate Embellishments
I am always looking for clever and most importantly easy ways to make things look like I put a ton of work into them when I really haven’t. Work smarter, not harder, right?
I can just imagine all of the shapes that can be made, and this is so darn easy! I am actually going to try this tomorrow to adorn the top of my daughter’s birthday cupcakes. She has chosen strawberry flavored cupcakes and I think the chocolate is going to top off the look and the flavor just right.
The full directions on how to make these is located here.

Margarita Cupcakes
Here is another delightful looking cocktail flavored cupcake. I just think these are such a wonderful idea for an afternoon party or get together with friends, not to mention that the recipe from Lori @ Recipe Girl looks absolutely devine.
I love me some margaritas, but I also love a really good strawberry and I am wondering if these could be adapted into strawberry margarita cupcakes as well. I think it would be a great flavor combination and I just may have to try it out!

Sticky Toffee Pudding Cupcake
Toffee has always been one of my very favorite candies, so when I came across this recipe for a brown sugar flavored spongecake topped with a sticky glaze and finished with toffee flavored cream cheese frosting from The Cupcake Blog, I couldn’t resist sharing it. This one is quickly moving right to the top of my must try this list (along with everything else of course
)
